Grilled Shrimp Tacos

Grilled Shrimp Tacos are easy to make on the grill and make a filling meal. Grilled shrimp has a great grilled flavor that works well in these shrimp tacos.

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tbsp  chili powder
  • 8 tortillas
  • 3 tbsp  mayonnaise
  • 2 tbsp Mexican hot sauce
  • handful fresh cilantro, for garnish
  • 2 limes, cut into wedges, for serving
  • ½ head of cabbage

Instructions
 

  • Preheat a grill to medium-high direct heat
  • In a medium bowl, toss the shrimp with olive oil, cumin, garlic powder, chili powder, and salt
  • Make the  coleslaw by shredding the cabbage then sprinkle with lime juice, and a bit
  • Mix together the mayonnaise and Mexican hot sauce. 
  • Warm tortillas on grill for 10 seconds per side. Then grill the shrimp for 1 to 2 minutes per side, until bright pink and cooked through.
  • To serve, place the coleslaw into a tortilla and top with grilled shrimp. Drizzle with the spicy mayo and top with torn cilantro leaves and a squeeze of fresh lime juice.
