Put the freekeh with water in a pot and boil it and simmer 15 minutes till it become tender
Slice the eggplants and brush them with olive oil, place them on the grill and grill 3 minutes each side
Wrap the eggplants in foil in order to be cooked better
Place the cooked freekeh, eggplant, chopped herbs, lemon juice, green onions , olive oil, salt , pepper and spices in a small bowl and mix
Put the yogurt sauce ingredients in a small bowl and whisk
Serve the salad on a serving platter and garnish with mint or parsley
