Ingredients
  

  • 4 ears of corn, husks and silks removed
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of garlic powder
  • ¼ teaspoon of ground cumin
  • ½ cup of mayonnaise
  • ¼ cup of sour cream
  • 2 tablespoons of adobo sauce
  • 1 tablespoon of lime juice
  • Salt and pepper to taste

Instructions
 

  • preheat your grill to medium-high heat
  • Brush the corn with the olive oil and season with the smoked paprika, garlic powder, cumin, salt, and pepper.
  • Place the corn on the grill and cook for about 8 minutes, turning occasionally, until the corn is lightly charred.
  • In a medium bowl, mix together the mayonnaise, sour cream, adobo sauce, lime juice, salt, and pepper. This will be your smoky chipotle sauce.
  • When the corn is done, remove it from the grill and brush it with the butter. Serve the corn with the smoky chipotle sauce and enjoy!
