Ingredients
  

  • 2 lbs. chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt

For the salsa:

  • 2 mangos, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, diced
  • ¼ cup cilantro, chopped
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt

Instructions
 

  • In a small bowl, combine the olive oil, garlic, lime juice, cumin, smoked paprika, chili powder, and salt. Rub the mixture into the chicken breasts and let marinate for 15minutes.
  • Meanwhile, prepare the salsa. In a medium bowl, combine themango, red bell pepper, jalapeño, cilantro, lime juice, garlic, and salt. Mixuntil combined.
  • Heat a grill or grill pan over medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through
  • Serve the chicken with the spicy mango salsa.
