- 2 lbs. chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
For the salsa:
- 2 mangos, diced
- 1 red bell pepper, diced
- 1 jalapeño, diced
- ¼ cup cilantro, chopped
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon salt
In a small bowl, combine the olive oil, garlic, lime juice, cumin, smoked paprika, chili powder, and salt. Rub the mixture into the chicken breasts and let marinate for 15minutes.
Meanwhile, prepare the salsa. In a medium bowl, combine themango, red bell pepper, jalapeño, cilantro, lime juice, garlic, and salt. Mixuntil combined.
Heat a grill or grill pan over medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through
