Ingredients
  

  • 4 boneless, skinlesschicken breasts
  • ¼ cup olive oil
  • ¼ cup lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon garlicpowder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup chopped fresh cilantro
  • 1 cup diced fresh pineapple
  • ¼ cup diced habanero pepper
  • 2 tablespoons diced red onion
  • 2 tablespoons diced jalapeno pepper
  • ¼ cup chopped fresh parsley
  • ½ cup diced bell pepper
  • ½ cup diced zucchini
  • ½ cup diced yellow squash

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a small bowl, whisk together the olive oil, lime juice, chili powder, garlic powder, onion powder, salt, and pepper.
  • Place the chicken breasts in a shallow dish and pour the marinade over the chicken. Allow the chicken to marinate for at least 30 minutes.
  • In a medium bowl, combine the cilantro, pineapple, habaneropepper, red onion, jalapeno pepper, and parsley.
  • Place the bell pepper, zucchini, and yellow squash on thepreheated grill. Grill for 5-7 minutes, or until tender and lightly charred.
  • Remove the vegetables from the grill and set aside.
  • Place the chicken breasts on the preheated grill and cook for 5-7 minutes, or until cooked through.
  • Remove the chicken from the grill and top with thepineapple-habanero salsa.
  • Serve the grilled chicken with the grilled vegetables
