- ¼ cup olive oil
- ¼ cup lime juice
- 1 teaspoon chili powder
- ½ teaspoon garlicpowder
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup chopped fresh cilantro
- 1 cup diced fresh pineapple
- ¼ cup diced habanero pepper
- 2 tablespoons diced red onion
- 2 tablespoons diced jalapeno pepper
- ¼ cup chopped fresh parsley
- ½ cup diced bell pepper
- ½ cup diced zucchini
- ½ cup diced yellow squash
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together the olive oil, lime juice, chili powder, garlic powder, onion powder, salt, and pepper.
- Place the chicken breasts in a shallow dish and pour the marinade over the chicken. Allow the chicken to marinate for at least 30 minutes.
