  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 head of romaine lettuce, chopped
  • ½ red onion, diced
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • 2 tablespoons lime juice
  • 2 teaspoons honey
  • 2 tablespoons olive oil
  • ½ feta cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat a grill to medium-high heat.
  • Rub the chicken breasts with the olive oil and season with salt and pepper.
  • Grill the chicken for 4-5 minutes per side, or until cooked through.
  • Let the chicken cool slightly, then cut into small cubes.
  • In a large bowl, combine the romaine lettuce, red onion, cherry tomatoes, and cucumber.
  • In a small bowl, whisk together the lime juice, honey, and olive oil.
  • Pour the vinaigrette over the salad and toss to combine.
  • Add the chicken cubes and toss again.
  • Serve and enjoy!
