In a large bowl, combine apricot preserves, ginger, garlic, soy sauce, and red pepper flakes. Mix until combined. Add the chicken and turn to coat. Cover and refrigerate for at least 4 hours, or overnight.
Preheat your grill to medium-high heat.
Remove the chicken from the marinade, season with salt and pepper, and place on the grill. Cook for 4-6 minutes per side, until the chicken is cooked through
While the chicken is cooking, make the glaze. In a small saucepan over medium heat, combine the apricot preserves, ginger, and garlic.Simmer for 5-7 minutes, stirring occasionally, until the glaze is thick andsyrupy.
Once the chicken is cooked through, brush with the glaze and cook for 1-2 minutes more. Serve with your favorite sides and enjoy!
