Grilled Chicken with Lemon-Garlic Butter

To make the lemon-garlic butter, simply combine the butter, garlic, lemon juice, and parsley in a small bowl. Spoon the butter over the grilled chicken, and serve with your favorite side dish.

  • 2 lbs. chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 2 tablespoons lemon juice

For the butter

  • 3 tablespoons butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons parsley, finely chopped

Instructions
 

  • In a small bowl, combine the olive oil, garlic, and lemon juice. Rub the mixture into the chicken breasts and let marinate for 15 minutes.
  • Meanwhile, prepare the butter. In a small bowl, combine the butter, garlic, lemon juice, and parsley. Mix until combined.
  •  Heat a grill or grill pan over medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through.
  • Serve the chicken with the lemon-garlic butter.
