Grilled Eggplant Salad with Freekeh

For the salad
- 1 Cup Freekeh
- 2 1/2 Cups Water
- 1 Large Eggplant
- 1/4 Cup Chopped Mint
- 1/4 Cup Parsley
- 3 Green Onion Strips
- 4 tbsp Olive Oil
- 3 tbsp Lemon Juice
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Sumac
For the yogurt sauce
- 1 Cup Greek Yogurt
- 1 tbsp Lemon Juice
- 2 tbsp Chopped Parsley
- 2 Minced Garlic Cloves
- 1/4 tsp salt
- 1/2 tsp Sumac
Preheat the grill to medium heat
Put the freekeh with water in a pot and boil it and simmer 15 minutes till it become tender
Slice the eggplants and brush them with olive oil, place them on the grill and grill 3 minutes each side
Wrap the eggplants in foil in order to be cooked better
Place the cooked freekeh, eggplant, chopped herbs, lemon juice, green onions , olive oil, salt , pepper and spices in a small bowl and mix Put the yogurt sauce ingredients in a small bowl and whisk
Serve the salad on a serving platter and garnish with mint or parsley
