Grilled Eggplant with Garlic-Herb Butter Glaze

Nothing says summer like a delicious BBQ and this recipe that is sure to be a hit! The eggplant is grilled to perfection and then topped with a flavorful garlic-herb butter glaze.

Ingredients
  

  • 2 large eggplants, sliced
  • 2 tablespoons olive oil
  • ¼ cup butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh herbs (such as thyme, oregano or rosemary)
  • Salt and pepper, to taste

Instructions
 

  • Preheat your grill to medium-high heat.
  • Brush the eggplant slices with olive oil and season with salt and pepper.
  • Place the eggplant slices onto the grill and cook for about 3 minutes per side until tender and lightly charred.
  • Meanwhile, in a small bowl, mix together the melted butter, garlic, and herbs.
  • Once the eggplant slices are cooked, brush them with the garlic-herb butter glaze.
