Grilled Eggplant with Garlic-Herb Butter Glaze

- 2 large eggplants, sliced
- 2 tablespoons olive oil
- ¼ cup butter, melted
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh herbs (such as thyme, oregano or rosemary)
- Salt and pepper, to taste
Preheat your grill to medium-high heat.
Brush the eggplant slices with olive oil and season with salt and pepper.
Place the eggplant slices onto the grill and cook for about 3 minutes per side until tender and lightly charred.
Meanwhile, in a small bowl, mix together the melted butter, garlic, and herbs.
Once the eggplant slices are cooked, brush them with the garlic-herb butter glaze.
