Grilled Kale Salad with Orange-Ginger Dressing

- 2 bunches of kale, washed and stems removed
- 2 tablespoons olive oil
- ¼ cup slivered almonds
- 2 oranges, peeled and cut into sections
- 2 tablespoons orange juice
- 2 teaspoons grated ginger
- 1 tablespoon honey
- 2 teaspoons apple cider vinegar
- 1 orange sliced
- 1 table spoon nuts
- Salt and pepper to taste
Preheat your grill to medium-high heat.
Toss the kale in the olive oil and season with salt and pepper
Place the kale on the grill and cook for 5 minutes, until the leaves are slightly wilted and charred.
Remove the kale from the grill and place it in a large bowl.
Add the almonds and orange sections to the bowl.
In a small bowl, whisk together the orange juice, ginger, honey, and vinegar.
Pour the dressing over the salad and toss until everything is evenly coated.
