Grilled Mahi-Mahi with Mango-Avocado Salsa

  • 2 lbs mahi-mahi fillets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp lemon juice
  • 1 mango, diced
  • 1 avocado, diced
  • red onion, finely diced
  • 1 jalapeno, finely diced
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime
  • salt and ground black pepper to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a shallow bowl, combine the olive oil, garlic, and lemon juice. Add the mahi-mahi fillets and season with salt and pepper. Marinate for 30 minutes.
  • In a medium bowl, combine the mango, avocado, red onion, jalapeno, cilantro, lime juice, and olive oil. Mix until combined and set aside.
  • Grill the mahi-mahi for 3-4 minutes on each side, or until cooked through.
  • Serve the mahi-mahi with the mango-avocado salsa. Enjoy!
