Grilled Peach Salad with Spinach and Raspberries Recipe

The combination of sweet grilled peaches and earthy spinach makes for a light, fresh-tasting salad. Pair it with your favorite protein for lunch or dinner.

  • 1 cup  raspberries
  • 5 cup  fresh baby spinach leaves
  • 2 medium peaches, sliced into thin wedges
  • cup  toasted sliced almonds
  • ½ cup raspberry vinaigrette

Instructions
 

  • Preheat grill to high heat (it needs to be hot to minimize sticking). Brush the sliced peaches on both sides with some olive oil. Grill each side for 2-3 minutes, undisturbed to allow grill marks to develop. Once ready, transfer to a plate
  • On a large platter, arrange a bed of mixed spinach and top with the raspberries, grilled peaches, and almonds, and drizzle with the vinaigrette to taste. Enjoy
