  • 4 large potatoes, cut into cubes
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste

For the Salsa:

  • 2 avocados, diced
  • 1 tomato, diced
  • ½ onion, diced
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a large bowl, combine the potatoes, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss to combine.
  • Place the potatoes on the grill and cook for 8-10 minutes, flipping once during the cooking process.
  • While the potatoes are cooking, prepare the salsa by combining the avocado, tomato, onion, lime juice, cilantro, salt, and pepper in a medium bowl.
  • Once the potatoes are cooked, top with the salsa and serve.
