  • 1 lb. shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cups mixed greens
  • 3 avocados, diced
  • ¼ cup toasted pumpkin seeds
  • salt and pepper to taste

For the Avocado-Cilantro Vinaigrette:

  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • ¼ cup chopped cilantro
  • 1 garlic clove, minced
  • salt and pepper to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a large bowl, combine the shrimp, olive oil, salt, and pepper. Toss to combine.
  • Place the shrimp on the grill and cook for 3-4 minutes per side, or until cooked through.
  • Meanwhile, in a small bowl, whisk together the olive oil, lime juice, cilantro, garlic, salt, and pepper.
  • In a large bowl, combine the cooked shrimp, mixed greens, and avocados. Drizzle the vinaigrette over the salad and toss to combine.
  • Sprinkle the toasted pumpkin seeds over the salad and serve.
