  • 4 sweet potatoes, halved lengthwise
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions
 

  • Preheat a grill to medium-high heat.
  • Brush the sweet potatoes with the olive oil and season with salt and pepper.
  • Place the sweet potatoes on the grill and cook for 10-15 minutes, turning once, until tender and lightly charred.
  • Meanwhile, melt the butter in a small saucepan over low heat. Add the garlic and sauté for 2 minutes.
  • Add the lemon juice and stir to combine.
  • Once the sweet potatoes are done, brush them with the garlic-lemon butter and serve.
