- 4 sweet potatoes, halved lengthwise
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 lemon, juiced
- Salt and pepper to taste
Preheat a grill to medium-high heat.
Brush the sweet potatoes with the olive oil and season with salt and pepper.
Place the sweet potatoes on the grill and cook for 10-15 minutes, turning once, until tender and lightly charred.
Meanwhile, melt the butter in a small saucepan over low heat. Add the garlic and sauté for 2 minutes.
Add the lemon juice and stir to combine.
