Grilled Sweet Potatoes with Avocado-Cilantro Sauce
Summer is a wonderful time to get creative in the kitchen. And one of our favorite summer meals is Grilled Sweet Potatoes with Avocado-Cilantro Sauce.

- 2 large sweet potatoes, cut into 1-inch cubes
- ¼ cup olive oil
- 1 ripe avocado, pitted and peeled
- ½ cup cilantro, chopped
- 2 cloves garlic, minced
- ¼ cup freshly squeezed lime juice
- 3 tablespoons water
- salt and pepper to taste
Preheat your grill to medium-high heat.
Toss the sweet potatoes with the olive oil, salt, and pepper.
Place the sweet potatoes on the grill and cook for about 10 minutes, or until lightly browned and fork tender.
Meanwhile, in a blender or food processor, combine the avocado, cilantro, garlic, lime juice, and water. Blend until smooth and creamy.
Serve the grilled sweet potatoes with the avocado-cilantro sauce. Enjoy!
