Summer is a wonderful time to get creative in the kitchen. And one of our favorite summer meals is Grilled Sweet Potatoes with Avocado-Cilantro Sauce.

Ingredients
  

  • 2 large sweet potatoes, cut into 1-inch cubes
  • ¼ cup olive oil
  • 1 ripe avocado, pitted and peeled
  • ½ cup cilantro, chopped
  • 2 cloves garlic, minced
  • ¼ cup freshly squeezed lime juice
  • 3 tablespoons water
  • salt and pepper to taste

Instructions
 

  • Preheat your grill to medium-high heat.
  • Toss the sweet potatoes with the olive oil, salt, and pepper.
  • Place the sweet potatoes on the grill and cook for about 10 minutes, or until lightly browned and fork tender.
  • Meanwhile, in a blender or food processor, combine the avocado, cilantro, garlic, lime juice, and water. Blend until smooth and creamy.
  • Serve the grilled sweet potatoes with the avocado-cilantro sauce. Enjoy!
