Grilled Tomato, Onion, and Bread Salad Recipe
This salad is a great way to use leftover grilled vegetables. The sweet and smoky flavor combination makes it the perfect hearty side dish for any BBQ.

- 4 cup tomatoes, cut into large chunks
- 4 cup crusty bread (Italian or French loaf), cut into chunks
- 1 cucumber, skinned and seeded, cut into large chunks
- 1 red onion, chopped
- 1 bunch fresh basil, torn into little pieces
- ½ cup extra virgin olive oil
- Salt and pepper to taste
grill the tomato and breach chunks on high heat until charred
Mix everything together and let marinate, covered, at room temperature for at least 30 minutes.
If refrigerating, let come to room temperature before serving
