- 2 medium zucchinis, cut into 1/2-inch slices
- 1 large red onion, cut into slices
- 2 bell peppers, cut slices
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 tablespoons white wine vinegar
- Salt and pepper, to taste
preheat the grill to medium-high heat
Place the zucchini, red onion, and bell peppers on the grill and cook until tender and lightly charred, about 4-5 minutes per side.
In a small bowl, whisk together the olive oil, honey, mustard, and vinegar. Season with salt and pepper.
Once the vegetables have finished cooking, remove them from the grill and toss with the honey-mustard vinaigrette
Arrange the grilled vegetables over a bed of greens, and serve immediately.
