  • 2 medium zucchinis, cut into 1/2-inch slices
  • 1 large red onion, cut into slices
  • 2 bell peppers, cut slices
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • Salt and pepper, to taste

Instructions
 

  • preheat the grill to medium-high heat
  • Place the zucchini, red onion, and bell peppers on the grill and cook until tender and lightly charred, about 4-5 minutes per side.
  • In a small bowl, whisk together the olive oil, honey, mustard, and vinegar. Season with salt and pepper.
  • Once the vegetables have finished cooking, remove them from the grill and toss with the honey-mustard vinaigrette
  • Arrange the grilled vegetables over a bed of greens, and serve immediately.
