Ingredients
  

  • 2 (6-ounce) halibut fillets
  • 3 teaspoon garlic, minced
  • 1 teaspoon oregano
  • ½ teaspoon lemon zest
  • 3 tablespoons olive oil

For the Tomato-Basil Relish

  • 1 cup diced tomatoes
  • 1 tablespoon capers
  • 2 tablespoons minced basil 
  • Salt and pepper to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • Rub the halibut with the garlic, oregano, lemon zest, and olive oil.
  • Place the halibut on the preheated grill and cook for 3-4 minutes per side, or until cooked through.
  • To make the Tomato-Basil Relish, combine the tomatoes, capers, basil, garlic, olive oil, and salt and pepper in a bowl.
