Ingredients
  

  • 2 large portobello mushrooms
  • 2 cups mixed seasonal greens
  • ½ cup of your favorite vegetables, diced (such as cucumber, bell pepper, carrot, celery, etc.)
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons freshly chopped herbs (such as oregano, thyme, and/or rosemary)
  • salt and pepper to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • Clean the mushrooms and lightly brush them with olive oil on both sides. Season with salt and pepper.
  • Grill the mushrooms for 5-7 minutes on each side, or until cooked through.
  • In a large bowl, combine the mixed greens, grilled portobello mushrooms, and diced vegetables.
  • Pour the garlic-herb vinaigrette over the salad and toss to combine.
  • Serve immediately. Enjoy!
