Grilled Artichokes

Equipment

Ingredients
  

For the artichokes

  • 4 Large Artichokes
  • 1 Lemon
  • Pinch of salt
  • 1/3 cup olive oil
  • 1 tsp Black pepper
  • 3 Garlic Cloves

For the yogurt sauce

  • 1/4 tsp salt
  • 2 tbsp olive oil
  • 1 cup pistachios
  • 3/4 cup yogurt
  • 2 tsp lemon juice

Instructions
 

For the artichokes

  • First you should clean the artichokes with lemon and water
  • Trim the leaves of the artichokes and dip the rest of it in water and lemon juice
  • Use a knife to peel the hard part of the artichokes
  • Remove any purple inner leaves found in the artichokes
  • Soak the cleaned artichokes in salt and water over a medium flame until boil
  • Drain and cool the artichokes

For the yogurt sauce

  • In a food processor,put the pistachios with salt until they are ground enough
  • Add oil until the mix becomes smooth
  • Remove the mixture from the processor and add the yogurt with the lemon juice

For grilling the whole artichokes

  • Preheat grill to medium heat
  • Brush the artichokes with oil and sprinkle salt and pepper
  • Grill them both sides until they become gold
  • Serve the artichokes with the yogurt sauce on top and a sprinkle of pistachios
