Grilled Artichokes Recipe
Artichoke is the edible part of the thistle plant in the family of sunflower. If you leave this plant to develop it will blossom and give you a purple flower that is not edible and you will see that you are going to take it off while cooking. There are many references that mentioned the origin of artichokes which is the middle east. In this article, you are going to try and taste the unique flavor of artichokes with the sour taste of yogurt.

Ingredients
For the artichokes
- 4 Large Artichokes
- 1 Lemon
- Pinch of salt
- 1/3 cup olive oil
- 1 tsp Black pepper
- 3 Garlic Cloves
For the yogurt sauce
- 1/4 tsp salt
- 2 tbsp olive oil
- 1 cup pistachios
- 3/4 cup yogurt
- 2 tsp lemon juice
Instructions
For the artichokes
- First you should clean the artichokes with lemon and water
- Trim the leaves of the artichokes and dip the rest of it in water and lemon juice
- Use a knife to peel the hard part of the artichokes
- Remove any purple inner leaves found in the artichokes
- Soak the cleaned artichokes in salt and water over a medium flame until boil
- Drain and cool the artichokes
For the yogurt sauce
- In a food processor,put the pistachios with salt until they are ground enough
- Add oil until the mix becomes smooth
- Remove the mixture from the processor and add the yogurt with the lemon juice
For grilling the whole artichokes
- Preheat grill to medium heat
- Brush the artichokes with oil and sprinkle salt and pepper
- Grill them both sides until they become gold
- Serve the artichokes with the yogurt sauce on top and a sprinkle of pistachios
