Ingredients
  

  • 3 Chicken breasts
  • 2 Bell Peppers
  • 1 Green Bell Pepper
  • 1 White Onion
  • 2 Garlic Cloves
  • 1/4 Cup Cilantro
  • 1/4 Cup Lime Juice
  • 1/2 tsp Cumin
  • 3 tbsp Water
  • 3 tbsp Olive Oil
  • 1 tbsp Soy Sauce
  • Salt and Pepper
  • 8 Corn Tortillas

Instructions
 

  • Whisk the marinade ingredients in a small bowl
  • Divide the marinade into 2 portion, half on the chicken and half on the vegetables. Refregerate both for 1 hour
  • Preheat the grill to medium heat
  • Cook the chicken 7-8 minutes each side until the temperature reaches 160F
  • Add the vegetables to the chicken and cook until crispy
  • Slice the Chicken and peppers
  • Warm the trotillas on the grill. Fill them with the chicken and veggies. Serve on a serving platter.

Notes

Chicken breast is a very good option with veggies and tortillas, this dish is low in calories and fat which makes it desired for people aiming to lose weight or following a healthy lifestyle. To make the dish healthier you can use the whole wheat tortillas to add more fibers to the whole meal.
