- 3 Chicken breasts
- 2 Bell Peppers
- 1 Green Bell Pepper
- 1 White Onion
- 2 Garlic Cloves
- 1/4 Cup Cilantro
- 1/4 Cup Lime Juice
- 1/2 tsp Cumin
- 3 tbsp Water
- 3 tbsp Olive Oil
- 1 tbsp Soy Sauce
- Salt and Pepper
- 8 Corn Tortillas
Whisk the marinade ingredients in a small bowl
Divide the marinade into 2 portion, half on the chicken and half on the vegetables. Refregerate both for 1 hour
Preheat the grill to medium heat
Cook the chicken 7-8 minutes each side until the temperature reaches 160F
Add the vegetables to the chicken and cook until crispy
Slice the Chicken and peppers
Warm the trotillas on the grill. Fill them with the chicken and veggies. Serve on a serving platter.
