Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups arugula
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ½ red onion, sliced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste

Lemon-Garlic Dressing:

  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper, to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a small bowl, combine the olive oil, oregano, thyme, salt, and pepper.
  • Rub the chicken breasts with the olive oil mixture and place on the preheated grill. Grill for 4-5 minutes per side, or until the chicken is cooked through.
  • Remove the chicken from the grill and let cool slightly before slicing into strips.
  • In a large bowl, combine the arugula, tomatoes, cucumber, red onion, and parsley.
  • To make the dressing, combine the garlic, olive oil, lemon juice, salt, and pepper in a small bowl and whisk until combined.
  • Add the grilled chicken to the salad and drizzle with the Lemon-Garlic Dressing
  • Serve and enjoy!
