Preheat the grill to medium-high heat.
In a small bowl, combine the olive oil, oregano, thyme, salt, and pepper.
Rub the chicken breasts with the olive oil mixture and place on the preheated grill. Grill for 4-5 minutes per side, or until the chicken is cooked through.
Remove the chicken from the grill and let cool slightly before slicing into strips.
In a large bowl, combine the arugula, tomatoes, cucumber, red onion, and parsley.
To make the dressing, combine the garlic, olive oil, lemon juice, salt, and pepper in a small bowl and whisk until combined.
Add the grilled chicken to the salad and drizzle with the Lemon-Garlic Dressing
