Grilled Chicken Salad with Lemon-Garlic Dressing

- 1 teaspoon dried thyme
- 2 cups arugula
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ½ red onion, sliced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper, to taste
Lemon-Garlic Dressing:
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper, to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, combine the olive oil, oregano, thyme, salt, and pepper.
- Rub the chicken breasts with the olive oil mixture and place on the preheated grill. Grill for 4-5 minutes per side, or until the chicken is cooked through.
