- 2 tablespoons melted butter
- 4 teaspoons Italian seasoning
- 2 pounds chicken breasts
- 2 medium zucchini or yellow squash, cut into diagonal slices
- 1 medium onion, cut into 1/2-inch slices
- 1 medium red bell pepper, cut into 1/2-inch strips
- 5 oz white or brown rice
Blend Spread with Italian seasoning in small bowl.
Brush chicken and vegetables with seasoning mixture.
Grill the chicken and vegetables, turning occasionally, until chicken is thoroughly cooked and vegetables are tender.
Place the rice in a pot and cover with water on medium heat and let it boil , when it starts boiling remove to low heat and leave it till all the water is evaporated
remove the chicken and vegetables from the grill and serve with the rice.
