  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 avocados, diced
  • 2 tomatoes, diced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 jalapeño pepper, seeded and minced (optional)

Instructions
 

  • Preheatgrill to medium-high heat.
  • Brush chicken breasts with olive oil, garlic, salt, and pepper.
  • Grill chicken for 6-8 minutes per side, or until cooked through.
  • Meanwhile, in a bowl, mix together avocados, tomatoes, lime juice, cilantro, and jalapeño pepper (if desired).
  • Serve grilled chicken with avocado-tomato salsa.
