Grilled Corn and Red Cabbage Slaw Recipe

This simple grilled corn and red cabbage slaw is a great side dish to serve with your favorite grilled meat, or try it as an appetizer!

Ingredients
  

  • 2 tbsp mayonnaise
  • 1 tbsp fresh lime juice
  • 1/4 medium head red cabbage, very thinly sliced
  • 2 ears of corn
  • 1 scallion, thinly sliced
  • Salt and freshly ground black pepper

Instructions
 

  • on high heat, grill cook the corn for 10 min on each side then remove from the grill and cut the corn kernel of the cob
  • In a large bowl, combine the mayonnaise and lime juice, and season with salt and pepper. Whisk until smooth. Add the cabbage, corn, scallions and cilantro.
  • Toss everything together to coat in the dressing. Season with salt and pepper to taste.
