Grilled Corn with Spicy Mango Salsa

  • 4 ears of fresh corn
  • 1 teaspoon olive oil
  • 2 ripe mangos, diced
  • 2 tablespoons red onion, minced
  • 2 tablespoons fresh cilantro, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 lime, zested and juiced
  • Salt and pepper, to taste

Instructions
 

  • Preheat your grill to medium-high heat.
  • Brush the corn with olive oil and season with salt and pepper.
  • Place the corn on the grill and cook, turning occasionally, until lightly charred and tender, about 10 minutes.
  • In a medium bowl, combine the diced mango, red onion, cilantro, jalapeño pepper, lime zest, and lime juice. Stir to combine.
  • Remove the corn from the grill and let cool slightly then remove the corn of the cup and toss with the salsa and serve
