Grilled Corn with Spicy Mango Salsa

- 4 ears of fresh corn
- 1 teaspoon olive oil
- 2 ripe mangos, diced
- 2 tablespoons red onion, minced
- 2 tablespoons fresh cilantro, minced
- 1 jalapeño pepper, seeded and minced
- 1 lime, zested and juiced
- Salt and pepper, to taste
Preheat your grill to medium-high heat.
Brush the corn with olive oil and season with salt and pepper.
Place the corn on the grill and cook, turning occasionally, until lightly charred and tender, about 10 minutes.
In a medium bowl, combine the diced mango, red onion, cilantro, jalapeño pepper, lime zest, and lime juice. Stir to combine.
Remove the corn from the grill and let cool slightly then remove the corn of the cup and toss with the salsa and serve
