Grilled Corn with Spicy Mango Salsa

Ingredients
- 4 ears of fresh corn
- 1 teaspoon olive oil
- 2 ripe mangos, diced
- 2 tablespoons red onion, minced
- 2 tablespoons fresh cilantro, minced
- 1 jalapeño pepper, seeded and minced
- 1 lime, zested and juiced
- Salt and pepper, to taste
Instructions
- Preheat your grill to medium-high heat.
- Brush the corn with olive oil and season with salt and pepper.
- Place the corn on the grill and cook, turning occasionally, until lightly charred and tender, about 10 minutes.
- In a medium bowl, combine the diced mango, red onion, cilantro, jalapeño pepper, lime zest, and lime juice. Stir to combine.
- Remove the corn from the grill and let cool slightly then remove the corn of the cup and toss with the salsa and serve
