  • 1 (8-ounce) filet mignon steaks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • ½ teaspoon freshly ground black pepper
  • ¼ cup butter, softened
  • ¼ cup crumbled blue cheese
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, minced
  • ½ teaspoon Dijon mustard

Instructions
 

  • In a large bowl, combine the olive oil, garlic, rosemary, and black pepper. Add the steaks and turn to coat. Cover and let marinate in the refrigerator for at least 1 hour
  • Preheat a grill or grill pan over medium-high heat.
  • In a small bowl, combine the butter, blue cheese, parsley, garlic, and Dijon mustard. Mix until well combined.
  • Grill the steaks for about 5 minutes per side, or until cooked through.
  • Top the steaks with the blue cheese butter and serve. Enjoy!
