Grilled Filet Mignon with Blue Cheese Butter

- 1 (8-ounce) filet mignon steaks
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- ½ teaspoon freshly ground black pepper
- ¼ cup butter, softened
- ¼ cup crumbled blue cheese
- 1 tablespoon chopped fresh parsley
- 1 clove garlic, minced
- ½ teaspoon Dijon mustard
In a large bowl, combine the olive oil, garlic, rosemary, and black pepper. Add the steaks and turn to coat. Cover and let marinate in the refrigerator for at least 1 hour
Preheat a grill or grill pan over medium-high heat.
In a small bowl, combine the butter, blue cheese, parsley, garlic, and Dijon mustard. Mix until well combined.
Grill the steaks for about 5 minutes per side, or until cooked through.
