Grilled Portobello Pizza with Garlic-Lemon Butter

It’s made with portobello mushrooms that are marinated in a garlic-lemon butter and then grilled to perfection

Ingredients
  

  • 4 portobello mushrooms, stems and gills removed
  • ½ cup butter, melted
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 cup mozzarella cheese, shredded
  • ½ cup your favorite pizza toppings (e.g. olives, peppers, onions, etc.)
  • Salt and pepper, to taste

Instructions
 

  • Preheat a grill to medium heat.
  • In a small bowl, whisk together the butter, garlic, lemon juice, salt, and pepper.
  • Place the portobello mushrooms on a large plate and brush both sides with the garlic-lemon butter.
  • Place the mushrooms on the grill, and cook for 4-5 minutes on each side, or until mushrooms are tender and charred in spots.
  • Top the mushrooms with the cheese and your favorite pizza toppings.
  • Grill for 2-3 minutes, or until the cheese is melted and the toppings are caramelized.
  • Serve and enjoy!
