Grilled Portobello Pizza with Garlic-Lemon Butter

Ingredients
- 4 portobello mushrooms, stems and gills removed
- ½ cup butter, melted
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 cup mozzarella cheese, shredded
- ½ cup your favorite pizza toppings (e.g. olives, peppers, onions, etc.)
- Salt and pepper, to taste
Instructions
- Preheat a grill to medium heat.
- In a small bowl, whisk together the butter, garlic, lemon juice, salt, and pepper.
- Place the portobello mushrooms on a large plate and brush both sides with the garlic-lemon butter.
- Place the mushrooms on the grill, and cook for 4-5 minutes on each side, or until mushrooms are tender and charred in spots.
- Top the mushrooms with the cheese and your favorite pizza toppings.
- Grill for 2-3 minutes, or until the cheese is melted and the toppings are caramelized.
- Serve and enjoy!
