  • 2 pounds red potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 2 tablespoons chipotle pepper, minced
  • alt and pepper to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a large bowl, mix together the olive oil, garlic, smoked paprika, chili powder, salt, and pepper.
  • Add the potatoes to the bowl and coat them with the seasoning mixture.
  • Place the potatoes onto the grill and cook for 8-10 minutes, flipping often, until they are golden and crispy.
  • In a small bowl, mix together the lime juice, honey, and chipotle pepper.
  • Drizzle the mixture over the potatoes and cook for an additional 2-3 minutes.
  • Serve the potatoes warm.
