Grilled Potato Salad with Basil
In this recipe you are going to taste the potato on the grill with a very delicious touch of basil

- 1 Kg Potato
- 1/2 Cup Salt
- 2/3 Cup Rice Vinegar
- 1 tbsp Honey
- 1/4 Cup Olive oil
- 1 Large Red Onion
- 3 Garlic Cloves
- 2 Cups Basil
- 2 tbsp Sesame seeds
In a large saucepan, cover the potatoes with water and salt
Turn the flame into medium heat and wait until the potato simmers, then try if it is tender with a skewer or knife so you can turn off
Turn the grill into medium heat
In a small bowl, whisk the vinegar with honey, salt and oil
Cut the red onion into wedges and set aside
Add the onion to a bowl with the garlic and a little bit of oil
Grill the potato with the onion wedges
Pour the above dressing done earlier on the potato and the onion then add basil and sesame seeds on top
Transfer the whole ingredients to a serving bowl and drizzle them with a little bit of olive oil

Potatoes are a source of pure carbohydrates, to benefit from it it is better to grill it unpeeled because the fibers are found in the peel itself
For diabetic people, it is better to decrease their intake of potato because it will cause a rapid increase and decrease in the blood sugar levels which is not needed in diabetics.
