  • 1 lb. large shrimp, peeled and deveined
  • 1 Tbsp. olive oil
  • ¼ tsp. garlic powder
  • 2 cups baby spinach
  • ¼ cup red onion, diced
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. honey
  • ¼ tsp. garlic powder
  • ¼ tsp. dried oregano
  • 1 sliced avocado
  • Salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high heat.
  • Toss shrimp with olive oil and garlic powder.
  • Grill shrimp for 4-5 minutes, flipping once, until cooked through.
  • Meanwhile, in a large bowl combine spinach, red onion, lemon juice, honey, garlic powder, oregano, salt, and pepper.
  • Once the shrimp is cooked, add to the bowl with the spinach and toss to combine and add the avocado.
  • Serve immediately. Enjoy!
