Grilled Shrimp Salad with Garlic-Lemon Vinaigrette
The combination of grilled shrimp, spinach, and vinaigrette is sure to please even the pickiest of eaters.

- 1 lb. large shrimp, peeled and deveined
- 1 Tbsp. olive oil
- ¼ tsp. garlic powder
- 2 cups baby spinach
- ¼ cup red onion, diced
- 2 Tbsp. fresh lemon juice
- 2 tsp. honey
- ¼ tsp. garlic powder
- ¼ tsp. dried oregano
- 1 sliced avocado
- Salt and pepper to taste
Preheat grill to medium-high heat.
Toss shrimp with olive oil and garlic powder.
Grill shrimp for 4-5 minutes, flipping once, until cooked through.
Meanwhile, in a large bowl combine spinach, red onion, lemon juice, honey, garlic powder, oregano, salt, and pepper.
Once the shrimp is cooked, add to the bowl with the spinach and toss to combine and add the avocado.
Serve immediately. Enjoy!
