- 1 lb. large shrimp, peeled and deveined
- 1 Tbsp. olive oil
- ¼ tsp. garlic powder
- 2 cups baby spinach
- ¼ cup red onion, diced
- 2 Tbsp. fresh lemon juice
- 2 tsp. honey
- ¼ tsp. garlic powder
- ¼ tsp. dried oregano
- 1 sliced avocado
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Toss shrimp with olive oil and garlic powder.
- Grill shrimp for 4-5 minutes, flipping once, until cooked through.
- Meanwhile, in a large bowl combine spinach, red onion, lemon juice, honey, garlic powder, oregano, salt, and pepper.
