- 1 lbs skirt steak
- 1 lbs pounds Yukon gold potatoes cut into 1-inch pieces
- 3 tbsp olive oil
- 1 tbsp chili powder
- sprigs thyme
- 1 limon
- Kosher salt and pepper
Mix the potatoes, oil, chili powder, salt, pepper, and thyme in a medium bowl.
Transfer to a roasting pan and cook over the grill, stirring once, until crisp and golden brown, about 40 minutes.
Remove the potatoes from pan, transfer to individual plates, and wipe the pan clean.
Season the steak with salt and pepper. Place on the grill and grill the steak to the desired doneness, 3 to 4 minutes per side for medium-rare.
Transfer to a cutting board and let rest 5 minutes before slicing.
Serve with the potatoes and lemon slices.
