Grilled skirt steak with roasted potatoes can be a simple dinner, or it can be a special-occasion meal. Either way, it is tender and delicious!

- 1 lbs skirt steak
- 1 lbs pounds Yukon gold potatoes cut into 1-inch pieces
- 3 tbsp olive oil
- 1 tbsp chili powder
- sprigs thyme
- 1 limon
- Kosher salt and pepper
Instructions
- Mix the potatoes, oil, chili powder, salt, pepper, and thyme in a medium bowl.
- Transfer to a roasting pan and cook over the grill, stirring once, until crisp and golden brown, about 40 minutes.
- Remove the potatoes from pan, transfer to individual plates, and wipe the pan clean.
- Season the steak with salt and pepper. Place on the grill and grill the steak to the desired doneness, 3 to 4 minutes per side for medium-rare.
- Transfer to a cutting board and let rest 5 minutes before slicing.
- Serve with the potatoes and lemon slices.
