  • 2 large sweet potatoes, cut into 1/2-inch rounds
  • 2 tablespoons extra-virgin olive oil
  • ¼ cup honey
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon grated lime zest
  • ¼ teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste

Instructions
 

  • Preheat the grill to medium-high heat.
  • Brush the sweet potato rounds with the olive oil.
  • Grill the sweet potatoes for 4-5 minutes per side, until tender and lightly charred.
  • Meanwhile, in a small bowl, whisk together the honey, lime juice, lime zest, cumin, and smoked paprika.
  • Brush the glaze over the sweet potatoes and continue to grill until the glaze is bubbly and lightly charred.
  • Remove from the grill and season with salt and pepper, to taste.
