- 2 large sweet potatoes, cut into 1/2-inch rounds
- 2 tablespoons extra-virgin olive oil
- ¼ cup honey
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon grated lime zest
- ¼ teaspoon ground cumin
- ¼ teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
Preheat the grill to medium-high heat.
Brush the sweet potato rounds with the olive oil.
Grill the sweet potatoes for 4-5 minutes per side, until tender and lightly charred.
Meanwhile, in a small bowl, whisk together the honey, lime juice, lime zest, cumin, and smoked paprika.
Brush the glaze over the sweet potatoes and continue to grill until the glaze is bubbly and lightly charred.
Remove from the grill and season with salt and pepper, to taste.
