Grilled Swordfish with Chimichurri Sauce

Ingredients
  

  • 2 lbs swordfish steaks
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon black pepper

For the sauce

  • ½ cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes

Instructions
 

  • In a medium bowl, combine the olive oil, lemon juice, garlic, oregano, basil, red pepper flakes and black pepper.
  • Place the swordfish steaks in a shallow dish and pour the olive oil mixture over. Turn the steaks to coat evenly. Cover and refrigerate for at least 2 hours.
  • Preheat the grill to medium-high heat.
  • To make the chimichurri sauce, combine all the ingredients in a small bowl and mix well.
  • Remove the swordfish steaks from the refrigerator and discard the marinade.
  • Place the steaks on the grill and cook for 4 minutes per side, or until the fish is cooked through.
  • Serve the grilled swordfish with the chimichurri sauce.
