  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons capers, drained and chopped
  • 2 small zucchini, cut into 1/4-inch slices
  • 2 red bell peppers, cut into 1-inch pieces
  • 2 ears of corn, husked and cut into 1-inch pieces
  • 2 red onions, cut into 1-inch pieces
  • salt and pepper to taste

Instructions
 

  • Preheat a grill to medium-high heat.
  • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, capers, salt, and pepper.
  • Place the zucchini, bell peppers, corn, and onions onto a large sheet pan. Drizzle the dressing over the vegetables and toss to coat.
  • Place the vegetables onto the grill. Grill for 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.
  • Transfer the grilled vegetables to a serving platter and serve.
