This chicken salad sandwich is a great alternative to your standard lunch meat and cheese. It's healthy and filling and has a nice kick from the curry powder

- 2 boneless skinless chicken breasts
- 1 green apple, chopped
- ½ red onion, finely chopped
- 2 celery stalks, finely chopped
- ½ cup mayonnaise
- ¼ cup Dijon mustard
- Baguette, bread
- 3 tbsp butter
- Salt and Pepper
- 2 tbsp apple cider vinegar
Instructions
- in a large bowl mix the chicken with salt and pepper and grill on high heat for 7 minutes on each side then remove from the heat and cut into small pieces
