Grilled Tomato, Onion, and Bread Salad Recipe
This salad is a great way to use leftover grilled vegetables. The sweet and smoky flavor combination makes it the perfect hearty side dish for any BBQ.

- 4 cup tomatoes, cut into large chunks
- 4 cup crusty bread (Italian or French loaf), cut into chunks
- 1 cucumber, skinned and seeded, cut into large chunks
- 1 red onion, chopped
- 1 bunch fresh basil, torn into little pieces
- ½ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- grill the tomato and breach chunks on high heat until charred
- Mix everything together and let marinate, covered, at room temperature for at least 30 minutes.
- If refrigerating, let come to room temperature before serving
