- 1 lb. shrimp (peeled and deveined)
- 1 tsp. olive oil
- 2 cloves garlic (minced)
- ½ tsp. chili powder
- ¼ tsp. cumin
- 2 cups lettuce (shredded)
- ½ cup cherry tomatoes (halved)
- ½ cup red onion (chopped)
- ¼ cup cilantro (chopped)
- salt and pepper to taste
Chipotle-Lime Sauce
- ½ cup plain Greek yogurt
- 1 chipotle peppers in adobo sauce (minced)
- ¼ cup lime juice
- ¼ tsp. garlic powder
- ¼ tsp. salt
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the shrimp, olive oil, garlic, chili powder, cumin, salt, and pepper. Toss to combine.
- Grill the shrimp for 2-3 minutes per side, or until they are cooked through.
- Meanwhile, make the chipotle-lime sauce. In a small bowl, combine the Greek yogurt, chipotle peppers, lime juice, garlic powder, and salt. Stir until everything is well combined.
