Grilled Potato Boats with Spicy-Honey Glaze

- 4 potatoes
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons olive oil
- 1 cup shredded shedder
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Cut each potato in half lengthwise and scoop out the insides, leaving a ¼-inch-thick shell.
- Place the potatoes on a baking sheet and brush each side with the olive oil. Sprinkle with salt and pepper.
- Grill the potatoes on each side for 10 minutes, or until they’re crispy and tender.
- In a small bowl, mix together the honey, garlic, and red pepper flakes.
- Brush the glaze over the potatoes and grill for an additional 2 minutes.
- Add cheese inside the potatoes grill for extra 5 mins
